baked pineapple

Ok, so I'm a week late, but I forgot to post about that Thanksgiving favorite recipe I promised. As typical, this Baked Pineapple got rave reviews. This recipe has become my go-to for potlucks and parties. It is sweet (diabetics beware - 1 whole cup of sugar!) but is still considered a side dish. It can be assembled the night before and then baked the next morning (which is great for those Sunday after-church potlucks).

So - without further ado, here it is!

Baked Pineapple

ingreds:
1 large can of crushed pineapple
2 heaping tsp flour
1 c. sugar
2 eggs, beaten
1 stick butter
5 slices of bread, cubed

directions:
Mix first four ingredients together and put in greased casserole dish. -- You can stop here and put in fridge overnight if you'd like.

Melt 1 stick of melted butter in saucepan and toss cubed bread pieces in to coat. Brown the bread cubes then place bread on top of casserole.

Bake at 350 degrees for 45 minutes.
